Preparation:

• To start take a Cake stand or any round platter.

• Spread the base with Kale leaves.

• Use cabbage as a tree base. Trim the bottom of the big cabbage so it will rest on theplatter. Trim of small portion on top of the big cabbage, so you can attach small cabbage on top of this with skewers.

• Cut the bottom of the small cabbage so it can fit on the top of the bottom cabbage. Trim of top portion of the small cabbage. May use potato or a trimmed base of small cabbage to use as the top of the tree base.

• Work your way up. Trim cabbage to give a tree shape as you keep working your way up.

• Cover cabbage with kale or any green leaves. Use toothpicks to secure broccoli florets on top of kale leaves. Fill the cone cabbage cone with broccoli. Use larger florets of broccoli at the base and smaller ones as you work your way up.

• Drape around the tree either with ribbons made from any vegetables like Daikon radish by using a peeler or to make it fancier you can use spirals of carrots or zucchini made with a Spirooli vegetable slicer (my favorite of all veggie decoration tools). Tuck the ends of ribbons to hide.

  • For ornaments, cut turnips or carrots into rounds or stars. Use a cookie cutter to make shapes and attach them with toothpicks. Garlands made with bell pepper strips are another idea. When you use soft veggies like cherry tomatoes or cranberries insert a toothpick first on broccoli.
  • and then put the tomato on the toothpick to avoid crushing tomatoes. Be creative to give colorful accents!
  • Make a tree topper with pepper rings or veggie stars.
  • Add cauliflower at the bottom for the ‘snow’ effect.

Serve with a veggie dip next to the tree.

As the guests start using it up, you will lose the visual effect. Keep some veggies aside to refill.
