A simple, savory mushroom snack that bursts with umami and a hint of spice. These baby bella bites are marinated in coconut aminos and seared to perfection in a cast iron pan, making them the perfect toothpick appetizer for gatherings or a healthy solo treat.

📝 Ingredients

  • 8 oz baby bella mushrooms, cleaned and quartered (or halved if small)
  • 2 tbsp coconut liquid aminos (soy-free seasoning)
  • 1–2 tsp hot sauce (adjust to taste)
  • 1 tsp avocado oil or olive oil (for cooking)
  • Optional garnish: chopped parsley, sesame seeds, or a squeeze of lime

🕒 Marination Time

  • At least 1 hour (up to 4 hours for deeper flavor)

🔥 Instructions

  1. Marinate: In a bowl, combine mushrooms with coconut aminos and hot sauce. You may also add some ketchup if you like. Toss well to coat. Cover and refrigerate for at least 1 hour.
  2. Heat the Pan: Preheat a cast iron skillet over medium-high heat. Add a touch of oil if needed.
  3. Sauté in Batches: Add a single layer of mushrooms to the pan (don’t overcrowd). Let them sear undisturbed for 2–3 minutes, then stir and cook another 2–3 minutes until browned and slightly crisp on edges. Repeat with remaining mushrooms. 
  4. Serve: Let them cool slightly, then skewer each piece with a toothpick. Serve warm or at room temperature.

  • Add a pinch of garlic powder or smoked paprika for extra flavor before cooking.
  • For a sweet-spicy twist, add a drop of maple syrup to the marinade.
  • Serve with a small bowl of dipping sauce (like avocado-lime crema or tahini drizzle) for a more festive feel.

🧂 Chef’s Tip:

Don’t crowd the pan! Sauté the mushrooms in a single layer, in batches if needed. Overcrowding traps moisture and causes the mushrooms to steam instead of sear, which prevents that delicious golden-brown caramelization.
