
Bottle Gourd Curry (Garden Fresh Recipe)
Bottle gourd is a light, hydrating vegetable rich in dietary fiber, vitamin C, and minerals like potassium and magnesium. It supports digestion, helps regulate hydration, and is low in calories, making it great for gut and metabolic health. Combined with tomatoes, onions, and fresh herbs, this dish is packed with antioxidants and plant-based nutrients.
Ingredients
- 2 tbsp extra virgin olive oil (EVOO)
- 3–4 cloves garlic, crushed
- A few curry leaves (optional, for flavor)
- 1 medium onion, diced
- ½ medium bottle gourd, peeled and diced into small pieces
- 3 medium tomatoes, diced
- 1 tsp salt (adjust to taste)
- ½ tsp chili powder (or to taste)
- Fresh cilantro, chopped (for garnish)
Instructions
- Prepare the bottle gourd – Peel and dice into small cubes.
- Heat oil – In a medium pan, heat EVOO on medium heat.
- Sauté aromatics – Add crushed garlic and curry leaves; sauté for 30 seconds until fragrant.
- Cook onions – Add diced onions and cook until soft and translucent.
- Add bottle gourd – Stir in diced bottle gourd and sauté for 2–3 minutes.
- Add tomatoes & spices – Add diced tomatoes, salt, and chili powder. Stir well.
- Cook – Cover partially or leave uncovered and cook on low-medium heat for about 15–20 minutes, stirring occasionally, until bottle gourd is tender and tomatoes are well blended.
- Garnish & serve – Sprinkle fresh cilantro on top before serving.
